/KITCHEN RECIPE VANILLA YOGURT (SLIMMING WITHOUT DIETS DO)
Ingredientes:
4 tazas de leche descremada
1 yogurt natural descremado y sin azúcar
2 cucharadas de esencia de vainilla Stevia líquida (opcional)
Elaboración:
1 Calentamos la leche en un caldero a fuego flojo y cuando está ligeramente tibia la apartamos y le añadimos el yogurt natural y unas gotitas de stevia líquida si quieres endulzarlos, dos cucharadas de esencia de vainilla casera y batimos todo bien.
2 Los vertemos en los vasitos en la yogurtera y los vamos a tener entre 6 y 8 horas. Esperamos que se enfríen los tapamos y los guardamos en el frigorífico, al día siguiente estarán perfectos.
Consejos y trucos:
- Si no tienes yogurtera un truco es ponerlos en el horno a fuego lento pero con cuidado de que no se hagan demasiado, se trata de encender el horno un ratito y después apagarlo dejando los yogures en ese calorcito durante 8 horas. No es lo mismo pero te puede sacar del apuro.
- Si ponemos mermelada en el fondo de los recipientes antes de echar la leche nos quedará un yogur de frutas muy rico. También podemos poner chocolate ligth, frutos secos, trocitos de galleta...
- Es importante que tapéis los recipientes mientras están en el horno para que el yogur cuaje. Yo he probado a ponerlos sin tapar y no solidifican igual.
Otra Forma de preparar nuestro rico yogur de vainilla
La yogurtera no es necesaria en lo absoluto. El calor residual del horno tras haberlo usado para otra cosa, cumple a la perfección esta función. Lo que sí necesitaremos son frascos de cristal y unos paños que ayuden a mantener el calor. Os cuento cómo lo he hecho y cual creo que ha sido el motivo de mi primer fracaso.
PREPARACIÓN:
Lo ideal es aprovechar para hacer yogur, cuando tengáis que hornear alguna otra cosa. Con el calor residual tras apagar el horno será suficiente para la fermentación. Pero si no es así, también podéis encender el horno a 50º mientras preparáis lo demás y apagarlo antes de meter los futuros yogures dentro.
Para activar las bacterias responsables de transformar la lactosa y cuajar el yogur, la leche debe estar a 40-45º, así que la ponemos a calentar. A mayor temperatura, morirán y a menor, no se activarán. Por tanto es importante controlar bien este paso y creo que pudo haber sido mi principal error en aquel primer intento fallido.
Si no tenéis termómetro de cocina (bienvenidos al club), la manera de comprobar que la temperatura sea adecuada es tocar la leche con el dedo meñique (con las manos limpias, por favor). Debéis notarla tibia, pero sin que llegue a quemaros.
Si nos hemos pasado de temperatura, dejamos enfriar la leche hasta que alcance los 40-45º. Entonces mezclamos el yogur, poco a poco y removiendo bien, hasta que no quede ningún grumo.
Pasamos el preparado a uno o varios frascos de cristal. Yo a veces uso una jarra, otras vasitos individuales de yogur y, cuando hago mucho, las dos cosas.
Colocamos los frascos sobre la bandeja del horno y envolvemos con varios paños.
Dejamos dentro del horno, apagado y cerrado, al menos ocho horas. Pasado este tiempo los guardamos en la nevera.
Cómo mantener el calor
Hay distintas alternativas que nos pueden permitir mantener el calor adecuado que la leche necesita para cuajar:
Horno. Podemos aprovechar para hacer yogur un día en el que tengamos que encender el horno. Tras usarlo, podemos aprovechar el calor residual para cuajar nuestros yogures. Antes de meter los recipientes con la mezcla de leche y yogur debemos asegurarnos de que la temperatura del horno ha descendido por debajo de los 50ºC.
Baño María. Podemos calentar la mezcla al baño María en un recipiente con tapa. Cuando la mezcla alcance los 45ºC, apagamos el fuego y dejamos el recipiente dentro de la olla durante 8 ó 10 horas.
Termo. Es una magnífica forma de preparar yogur. Antes de introducir la leche, pondremos agua a 50ºC en su interior para calentarlo. Luego la desechamos y vertemos la mezcla de leche y yogur.
Radiador. Si hacéis yogures en invierno un radiador puede ser una magnífica fuente de calor para acelerar el proceso.
Manta eléctrica. Como en el caso del radiador, puede ser de gran utilidad.

Another way to prepare our rich vanilla yogurt
The yogurt maker is not necessary at all. The residual heat of the oven after having used it for something else, perfectly fulfills this function. What we need are glass bottles and a cloth to help keep warm. I tell you how I have done and which I think has been the reason for my first failure.
PREPARATION:

We spent the prepared one or more glass jars. I sometimes use a jug, other individual yogurt cups, and when do much, both.
We put the jars on the baking tray and wrap with several cloths.
We left inside the oven off and closed, at least eight hours. After this time we keep them in the fridge.
How to keep warm
